This easy slow cooker lamb recipe coats loin chops in a spiced marinade, then cooks them over onions until tender and full of flavour. It’s a simple set-and-forget dinner that pairs beautifully with rice and Greek yoghurt.

Ingredients
 

  • 8 lamb loin chops
  • 4 red onions
  • 1 tbsp crushed garlic
  • 1 tbsp crushed ginger
  • 1 tbsp ground chilli
  • 1 tbsp ground cumin
  • 1 tsp cloves
  • 2 tsp salt
  • 2 tsp pepper
  • 1/4 cup balsamic vinegar of Modena
  • 1/4 cup water

Method
 

  1. Start by giving those lamb chops some serious flavour.
  2. In a bowl, mix together the crushed garlic, ginger, red chilli powder, cumin, cloves, salt, pepper, and balsamic vinegar.
  3. Add lamb chops to our spicy, tangy marinade and give them a good massage.
  4. Make sure every bit of those chops is coated in that deliciousness, get your hands in there and make it count!
  5. Now, let’s build the base.
  6. Place the sliced red onions in the bottom of your slow cooker and pour over the water.
  7. The onions are going to cook down and get all soft and sweet, soaking up all those lamb juices.
  8. Lay your marinated lamb chops right on top of the onions.
  9. They’re going to sit there and slowly cook to tender perfection, soaking in all that amazing flavour.
  10. Pop the lid on your slow cooker and set it to low for 5 hours.
  11. During this time, your kitchen is going to smell like absolute heaven, just try to resist peeking!
  12. When the time’s up, your lamb will be tender and juicy, ready to serve.
  13. Plate it up with some fluffy rice and a dollop of Greek yoghurt for a delicious, balanced meal.
