This easy loaf is made with simple pantry staples, grated fruit or vegetables, and whatever extras you’ve got on hand like nuts, seeds, or choc bits. It’s a handy flexible bake that’s perfect for snacks, lunchboxes, or using up bits and pieces.

Ingredients
 

  • 1 cup self-raising flour
  • 1/4 tsp bi-carb soda
  • 2 tsp cinnamon
  • 2 eggs
  • 1/2 cup white sugar
  • 2/3 cup sunflower oil
  • 2 cups grated fruit or vegetables
  • 1/2 cup milk chocolate bits

Method
 

  1. Grate fruit and vegetables.
  2. In a bowl add eggs, oil and sugar and whisk.
  3. Add flour, cinnamon, and bicarb soda and mix together.
  4. Now add your pantry bits and bobs and fruit & veg and stir through.
  5. Pop into a lined loaf tin and bake on 180C for 50 to 60 mins and a skewer comes out clean when dipped into the middle.
