Tips & Tricks for the Perfect Sausage Roll Scrolls
1. Choosing the Right Sausages
The secret to a killer sausage roll lies in the quality of the sausage meat. Opt for gourmet beef sausages with minimal fillers – these will give your scrolls that rich, meaty flavour that everyone craves. If you’re feeling adventurous, you could swap beef for pork or chicken sausages. Just make sure to remove the casings before mixing!
2. Get That Pastry Perfect
Make sure your puff pastry is partially thawed before rolling. Too frozen, and it’ll crack; too soft, and you’ll end up with a sticky mess. If the pastry becomes too floppy while assembling, pop it in the freezer for 10–15 minutes to firm it up before slicing. Trust me, this little hack will save you some frustration! 🙌
3. Veggie Prep Made Easy
The grated carrot and zucchini add a lovely texture and moisture to the filling. After grating, give them a quick squeeze with paper towel to remove excess water. This will help your scrolls stay crisp, not soggy. Nobody likes soggy scrolls!
4. Cheese, Please!
I used Westacre Mexican cheese for that punchy flavour, but feel free to experiment! Vintage cheddar, Colby, or even mozzarella work beautifully too. Want extra indulgence? Sprinkle some Parmesan on top before baking for that golden, cheesy crust. 🧀✨

Serving & Pairing Suggestions 🍴
These scrolls are incredibly versatile and pair well with a variety of accompaniments. Here are my favourites:
Dipping Sauces: Classic BBQ sauce or tomato sauce (ketchup) is a must! For something fancier, try a homemade aioli or sweet chilli sauce.
Side Salad: A fresh green salad with a tangy vinaigrette cuts through the richness of the scrolls.
Entertainer’s Platter: Serve these scrolls alongside some party pies, sausage rolls, and cheese cubes for the ultimate Aussie snack spread.
Pro tip: Serve them warm straight from the oven – they’ll disappear faster than you can say “sausage scrolls” 😍
Storage Options 🥡
1. Fridge
If you’ve got leftovers (lucky you!), pop the scrolls in an airtight container and store them in the fridge for up to 3 days. Simply reheat in the oven at 180°C for 5–7 minutes to crisp them up again.
2. Freezer
Sausage Roll Scrolls freeze like a dream! After baking, let them cool completely, then transfer to a freezer-safe container. They’ll keep well for up to 3 months. When you’re ready to enjoy them, reheat from frozen at 190°C for 10–12 minutes.
3. Make-Ahead Option
If you’re planning ahead, assemble and roll the scrolls, but don’t bake them yet. Instead, freeze the uncooked log, then slice and bake straight from frozen. It’s a lifesaver for last-minute entertaining! 🧊

Frequently Asked Questions
Absolutely! Swap out the regular puff pastry for a gluten-free version, and double-check your sausage ingredients to ensure they’re gluten-free too.
Yes, you can! Store-bought sausage mince works just as well and saves time. However, sausages tend to have a more flavourful seasoning blend, so you might want to add an extra pinch of smoked paprika or garlic to amp up the taste.
This usually happens if the pastry is too soft. Pop the rolled log into the freezer for 10–15 minutes before slicing, and use a sharp knife. This will give you neat, even scrolls every time!
