This easy vanilla slice uses vanilla custard, SANZ crackers, and a simple lemon icing for a fuss-free dessert that still feels like a real treat. It’s easy to prep ahead and perfect for slicing up and sharing.

Ingredients
 

  • 1 pkt SANZ crackers
  • 1 litre vanilla custard
  • 2 tbsp gelatine powder
  • 2 cups icing mixture
  • 2 tbsp unsalted butter
  • 1 lemon

Method
 

  1. Pop gelatine into 1/2 cup of cold water and stir.
  2. Microwave for 1 minute, stir, and if not dissolved, zap again for 30 seconds.
  3. Place a container of custard into a separate bowl.
  4. Combine the gelatine by pouring it on top of the custard, pouring and stirring at the same time.
  5. Refrigerate for 1 hour until starting to firm.
  6. Line a slice pan with baking paper, cover the bottom with SANZ biscuits, then pour over the custard mix.
  7. Top with more biscuits and pop in the fridge overnight.
  8. For lemon icing, mix icing sugar, butter, zest and lemon juice until smooth, then spread over the top layer of biscuits.
  9. Slice between biscuits and enjoy.
