Carrot Cake The Joy of Baking Made Simple

What I love most about this carrot cake recipe is its simplicity. You don’t need any fancy equipment or hard-to-find ingredients. Just a mixing bowl, a grater, and an oven. Plus, it’s packed with wholesome ingredients like carrots, apples, and almonds, making it a slightly healthier option for your sweet tooth.

Why You’ll Love This Recipe

  • One-Bowl Wonder: No need for multiple bowls or complicated steps. Just mix everything in one bowl, bake, and you’re done!
  • Nutritious and Delicious: The combination of grated carrots, apples, and almonds not only adds incredible flavour but also a good dose of nutrients.
  • Perfect for Any Occasion: This carrot cake is versatile enough for a cosy afternoon tea, a family gathering, or even a special occasion.
Tips and Tricks for the Best Carrot Cake

Choose the Best Ingredients

  • Fresh Carrots: Go for the freshest carrots you can find. They’ll add the most flavour and moisture to your cake.
  • Sweet Apples: Whether you use a tin of apples or freshly grated ones, ensure they are sweet and ripe. This helps to keep the cake moist and adds a natural sweetness.
  • Almonds: Swap out almonds for any other nut you like. Walnuts, cashew, hazelnut. It will give your cake a delightful crunch and a richer taste.

Baking Tips

  • Don’t Overmix: When combining the ingredients, mix just until everything is incorporated. Overmixing can make your cake dense.
  • Check Your Oven: Every oven is different. Start checking your cake around the 50-minute mark. If a skewer inserted into the centre comes out clean, your cake is ready.
  • Cooling is Key: Let your cake cool completely before icing. This ensures the icing goes on smoothly and doesn’t melt off.
Serving Suggestions and Pairings

There are loads of reasons why I keep coming back to chia breakfast pudding — and why it consistently ranks as one of the most searched-for healthy breakfast ideas.

  • Tea Time: Serve a slice with a hot cup of English Breakfast tea. The rich, malty flavours of the tea complement the sweet and spicy notes of the cake.
  • Coffee Companion: Pair it with a latte or a cappuccino. The creamy, frothy coffee balances the cake’s sweetness perfectly.
  • Whipped Cream Wonder: Add a dollop of freshly whipped cream on the side. It’s light and airy, making each bite even more delightful.
  • Fruit Garnish: Garnish with a few fresh berries or a sprinkle of extra grated carrots for a pop of colour and freshness.

Frequently Asked Questions

Can I use a different type of oil in the recipe?

Absolutely! While I typically use vegetable oil for its neutral flavour, you can experiment with other types of oil. Olive oil can add a slightly fruity note, while coconut oil will give your cake a subtle tropical twist. Just make sure the oil is in liquid form and measure it the same way. 🥥🌿
How do I store my carrot cake to keep it fresh?

To keep your carrot cake fresh, store it in an airtight container. You can leave it at room temperature for up to 2 days. If you want it to last longer, place it in the fridge, where it will stay fresh for up to a week. For even longer storage, you can freeze the cake (preferably without the icing) for up to 3 months. Just wrap it tightly in cling wrap and aluminium foil. When ready to enjoy, let it thaw in the fridge overnight. ❄️🍰

Can I make this cake gluten-free?

Yes, you can make this carrot cake gluten-free by substituting the regular flour with a gluten-free flour blend. Make sure to use a blend that’s meant for baking, as it will have the right mix of flours and starches to mimic the texture of wheat flour. You might also want to add a teaspoon of xanthan gum to help with the cake’s structure. Enjoy your gluten-free treat! 🌾🚫
