These cheeseburger muffins turn everything you love about a cheeseburger into a fun, handheld bake. Seasoned beef goes into brioche bun cases pressed into a muffin tin, with a melty mozzarella centre hidden in the middle and onion on top.

They make six and are a guaranteed hit with the kids. Serve them hot with burger sauce or tomato sauce for dipping, perfect for a casual dinner or party food.

Why You’ll Love It

These are a hit. You get cheeseburger flavour in a handheld bake with a melty cheese centre, they’re a guaranteed kid-pleaser, great for dinner or party food, and it makes six.

The Shortcut That Makes It Work

Brioche buns become the case. You press a halved bun into a muffin tin for an instant base, so there is no pastry, and the muffin tin shapes them for you.

Handy Tips

Press the brioche bun halves into the muffin holes with a glass to shape them. Mix the beef and seasoning really well so the flavour is even. Hide the mozzarella in the middle and cover with a little more beef so it stays gooey inside. Bake until golden and cooked through, then serve hot.

Make It Suit Your House

Add your favourite burger toppings, a little cheese on top, pickles, or a dab of mustard in the centre. Use cheddar instead of mozzarella if you prefer. Serve with a side salad or chips to make it a full meal.

What To Serve With It

Serve hot with burger sauce or tomato sauce for dipping. A side salad or some chips rounds it out.

Leftovers

Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or air fryer until hot through, so the brioche crisps back up.
