  • 1/2 cup (120g) olive oil
  • 3 lemons
  • 1 tbsp (14g) Pepper
  • 1 tbsp (17g) salt
  • 1/2 cup (50g) fine grated Parmesan cheese
  • 1 Capsicum
  • 2 bunches Broccolini

Instructions

  1. In a bowl, combine cheese, juice from 2 lemons, salt, and pepper. Mix it up!
  2. Pour in that 1/2 cup of olive oil and give it another stir.
  3. Make a checkerboard cut on your chicken, and lather it with your cheesy peppery mix. Mmm!
  4. On a lined baking tray, spread out your broccolini and capsicum.
  5. Decorate with lemon slices, placing half of them down.
  6. Lay your chicken over these slices, and top each breast with another lemon slice.
