Ingredients
 

  • 1 sweet potato
  • 500 g frozen green prawn
  • 400 ml coconut cream
  • 100 g green curry paste
  • 300 g spinach
  • 1/2 can water

Method
 

  1. In a pan, add the coconut cream, water and green curry paste. Whisk together over medium heat until smooth and fragrant 🥥
  2. Dice the sweet potato into bite-sized pieces and add to the pan. Simmer until starting to soften.
  3. Add the prawns and continue to cook until they turn orange and are cooked through 🍤
  4. Serve hot with fluffy rice and enjoy an easy homemade green curry that tastes even better the next day 🍚
