This is hands-down one of the easiest, most satisfying meals I’ve ever made, and I guarantee it’ll earn a permanent spot in your weeknight dinner rotation.

Ingredients
 

  • 12 small tortillas
  • 500 g beef mince
  • 1 pkt taco seasoning
  • 250 g grated cheese
  • 300 g jar salsa

Method
 

  1. Divide your beef mince into 12 portions. Lay your tortillas on a board and spread one portion of mince over half of each tortilla.
  2. Sprinkle half the taco seasoning over the mince, then top with a good pinch of cheese.
  3. Fold the tortillas in half and press gently so they stick. Place them on a baking tray and lightly spray with oil. Bake at 180°C for 20 minutes.
  4. Flip the tacos, sprinkle over the remaining seasoning, add a spoonful of salsa on top, and finish with the rest of the cheese. Bake another 10 minutes until golden and melty.
  5. Serve as they are, or pile on shredded lettuce, sour cream, and guac for the full fiesta!
