This is taco night made easy. Instead of frying tacos one by one, you fold seasoned beef and cheese into tortillas, line them up on a tray, and let the oven do the work. They come out crispy, cheesy and golden, all at once.

It is a fun, hands off way to feed the family, and the tray means everyone’s tacos are ready together rather than in batches. A spoon of salsa and extra cheese on top finishes them off.

Serve them as they are, or pile on the toppings for a proper taco spread. Either way, they go fast.

Why You’ll Love It

It takes the fiddle out of taco night, no frying tacos one at a time, the oven crisps them all together. It is genuinely hands off once they are folded, it makes a big batch, and the crispy, cheesy result is a guaranteed family favourite. Load them up with toppings or keep them simple, either way it is an easy, fun weeknight dinner.

The Shortcut That Makes It Work

The tray bake is the shortcut. Rather than standing at the stove frying tacos in batches, you fold them all, lay them on one tray, and bake. Everyone’s tacos crisp up at the same time with no babysitting, so you get crunchy tacos for a crowd with almost no effort.

Handy Tips

Do not overfill the tortillas or they are hard to fold and keep closed, a portion of mince spread over half is plenty. Press them gently after folding so they hold, and a light spray of oil helps them crisp and go golden. Adding the salsa and second layer of cheese after the flip keeps the tortillas crisp rather than soggy. Watch them near the end so the cheese melts without the edges over-browning.

What To Serve With It

Serve them as they are, or pile on shredded lettuce, sour cream and guacamole for the full taco experience. A side of rice or a simple salad rounds it into a bigger meal.

Leftovers / How to Store It

Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or air fryer to bring back the crisp, as the microwave will soften them.

FAQs

Is the mince raw when it goes in?

Yes. The thin layer of mince cooks through in the oven as the tortillas crisp, so there is no need to brown it first. Spread it thinly and evenly so it cooks in the time given.

Can I use chicken instead of beef?

Yes. Cooked shredded chicken or chicken mince works well. If using chicken mince, keep the layer thin so it cooks through.

How do I keep them crispy?

A light spray of oil and adding the salsa only after the flip both help. To keep leftovers crisp, reheat in the oven or air fryer rather than the microwave.

What toppings go well?

Shredded lettuce, sour cream, guacamole, sliced jalapeños or fresh coriander are all great. Keep them on the side so the tacos stay crisp.
