  • 1kg chicken thighs
  • 1 can coconut cream
  • 1 tbsp crushed garlic
  • 1 tbsp crushed ginger
  • 1 cup peanut butter
  • 1/4 cup sweet soy sauce
  • Juice of a lime

Instructions

  1. Preheat your oven to 200C. Grab a baking dish and arrange your chicken thighs in a single layer.
  2. In a bowl, whisk together the coconut cream, crushed garlic, ginger, peanut butter, sweet soy sauce, and lime juice. This is where the magic happens!
