The Secret to the Best Mexican Lasagna

The difference between an okay dish and an amazing one? It’s all about the ingredients and technique. If you want to take your Mexican lasagna to the next level, here are a few key secrets that will make all the difference.
The key to making this Mexican lasagna next-level good? The seasoning! 🌶️ Instead of relying on pre-packaged taco seasoning, I highly recommend using a mix of smoked paprika, garlic powder, onion powder, and a touch of chilli powder. This brings out deep, smoky, and rich flavours that make all the difference.
And let’s not forget the cheese! 🧀 A mix of cheddar and mozzarella creates the perfect balance between sharp, tangy flavour and that irresistible gooey stretch.
Tips & Tricks for the Best Mexican Lasagna

Want to make sure your Mexican lasagna turns out perfectly every time? Follow these tried-and-tested tips and tricks to ensure maximum flavour, perfect layers, and the ultimate cheesy goodness!

  • Use soft tortillas – They soak up the flavours and give a beautiful, tender texture. Corn tortillas work well for a more authentic taste.
  • Let it rest before slicing – Just like traditional lasagna, giving it 10 minutes to rest helps it hold its shape when serving.
  • Spice it up (or down!) – Love heat? Add extra chilli powder or fresh jalapeños. Want it mild? Reduce the spices a little and use mild salsa.
  • Don’t skimp on the cheese – A good layer of cheese on top is what makes this dish ultra-satisfying.
  • Make it vegetarian – Swap the beef for extra beans, mushrooms, or lentils for a delicious meat-free version.
What to Serve with Mexican Lasagna

  • Guacamole – The creamy, zesty flavour balances the spice.
  • Mexican-style salad – A fresh salad with lettuce, cherry tomatoes, and lime dressing is a great side.
  • Elote (Mexican street corn) – Grilled corn with mayo, chilli, and parmesan? Yes, please!
  • A refreshing drink – A margarita, agua fresca, or even a cold beer pairs perfectly.

Ingredients

  • 500 g beef mince
  • 2 onions diced
  • 2 capsicums diced
  • 2 cups frozen or canned corn
  • 2 x 400g cans kidney beans
  • 2 x 400g cans crushed tomatoes
  • 1 packet taco seasoning or use the spices below
  • 2 tbsp smoked paprika
  • 1 tbsp oregano
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Chilli powder to taste
  • 10 small tortillas
  • 1 x 300g jar of salsa
  • 500 g Mexican grated cheese

Method

  1. Heat a pan and brown the mince.
  2. Add the onion, capsicum, and spices. Cook for a few minutes until the onion softens.
  3. Stir in the corn, beans, and tomatoes.
  4. Once it starts to bubble, cover and cook on low for 15 minutes. Remove the lid and cook for another 5 minutes to thicken.
  5. In a lasagna dish, spread a thin layer of the beef mixture, top with two tortillas, then more beef and some cheese. Repeat for three layers, finishing with tortillas.
  6. Pour the salsa over the top and spread evenly.
  7. Sprinkle on the remaining cheese.
  8. Bake at 180°C for 30 minutes until golden. Let it rest for 10 minutes before serving. I love adding a big dollop of sour cream on top! Enjoy! ????
