Why You’ll Love This Chicken and Fried Rice

This Chicken and Fried Rice recipe is a real weeknight hero. Here’s why:

  • Super quick – It’s ready in about 20 minutes!
  • Budget-friendly – Made with ingredients you probably already have.
  • Customisable – Use any veggies, rice, or sauces you like.
  • Meal-prep friendly – This dish stores well and tastes even better the next day.

Plus, it’s a great way to avoid wasting food! Have leftover roast chook? Toss it in! Leftover veggies or rice in the fridge? They’re perfect here. This dish is as flexible as your pantry.

Pro Tips for the Best Chicken and Fried Rice

  • Use day-old rice for perfect texture. Fresh rice can be too soft and sticky. If you don’t have day-old rice, cook some and spread it out on a tray to cool in the fridge for 30 minutes.
  • High heat is your friend. Cooking on high heat gives the rice and veggies that slight crispy edge you love from takeaway fried rice.
  • Swap the chicken: If you’ve got leftover roast chicken or BBQ chook, use that instead! It’ll add even more flavour.
  • Add extras: Feeling fancy? Throw in a handful of prawns 🦐 or some bacon bits for a fun twist.
Serving Suggestions: Make It a Meal

This Chicken and Fried Rice can hold its own, but if you want to elevate the experience, serve it with:

  • Prawn crackers 🦐
  • A side of steamed dumplings 🥟
  • Miso soup 🍲 for a lighter option
  • Drizzle some extra chilli sauce 🌶️ or a squeeze of lime over the top for a zingy finish.

Pair it with an ice-cold ginger beer 🍺 or a refreshing lemon iced tea. Your weeknight dinner just became restaurant-level good!

Storage & Leftovers

One of the best things about Chicken and Fried Rice is that it tastes even better the next day (if you have any left, that is!). Here’s how you can store and reheat it:

  • Fridge: Store in an airtight container for up to 4 days.
  • Freezer: Pack individual portions into zip-lock bags or containers and freeze for up to 2 months.
  • Reheat: For the best results, reheat in a hot pan with a dash of oil. This keeps the rice from going mushy. If microwaving, cover with a damp paper towel to retain moisture.

Frequently Asked Questions

Can I use brown rice instead of white rice?

Absolutely! Brown rice adds extra fibre and a nutty flavour. Just be aware that it has a firmer texture, so it may need a bit more cooking time.
What’s the best way to keep fried rice from being soggy?

Use cold, day-old rice and cook on high heat. Avoid overcrowding the pan – if it’s too full, the rice will steam instead of frying.

Can I make this Chicken and Fried Rice recipe vegetarian?

Of course! Simply swap the chicken for tofu or tempeh and use vegetable stock powder instead of chicken stock powder. Add more veggies like snow peas or mushrooms for a hearty feel. 🍄
