This chicken biryani bake is an easy oven dinner with plenty of flavour and hardly any fuss. With chicken thigh, basmati rice, lentils, veggies and tikka masala paste, it’s the sort of meal that feels hearty and satisfying without being hard work. A great all-in-one dinner for busy nights.

Ingredients
 

  • 500 g chicken thigh
  • 2 cups basmati rice
  • 3 cups chicken stock
  • 400 g lentils
  • 3 tbsp tikka masala paste
  • 1 onion
  • 2 cups frozen veggies
  • 200 g Greek yoghurt

Method
 

  1. Pop the chicken and tikka masala paste into a baking dish and stir until the chicken is coated.
  2. Add the rice, onion, veggies, lentils and chicken stock.
  3. Give it all a good mix.
  4. Cover tightly with foil and bake at 200°C for 40 minutes.
  5. Remove the foil, fluff the rice with a fork, then dollop Greek yoghurt over the top before serving.
