This one pan chicken with garlic tomato rice is the kind of dinner that saves your bum on a busy night. You get juicy chicken, fluffy rice and loads of rich tomato and garlic flavour, all cooked in the one pan.

It is cosy, budget-friendly and made with simple ingredients, which is always a win. Barely any fuss, not much washing up, and a proper family dinner at the end of it.

Everything cooks in the one pan, so it is easy on the washing up and easy on your brain too. The rice soaks up all the garlicky tomato flavour, and the chicken stays juicy on top.

Brown the chicken first so you get a bit of colour and extra flavour before it finishes cooking on the rice. Once the liquid is in, keep the lid on so the rice can cook through properly.

This works well as a full meal on its own since you have got the chicken and rice all sorted in one pan. It is a great weeknight dinner when you want something hearty without a whole lot of effort.

This one pan chicken with garlic tomato rice is an easy, budget-friendly dinner made with simple pantry staples. The chicken turns golden and juicy while the rice soaks up all the garlicky tomato flavour underneath. It is a fuss-free family meal with hardly any washing up.

Ingredients
 

  • 4 skinless chicken thigh
  • 2 cup basmati rice
  • 1 jar sun-dried tomato
  • 2 tbsp tomato paste
  • 2 tbsp minced garlic
  • salt
  • pepper
  • olive oil
  • 3 cup water

Method
 

  1. Sprinkle the chicken thighs with salt, pepper and a little olive oil.
  2. Brown them on both sides in a hot pan, then remove and set aside.
  3. Pour the rice and garlic into the same pan and stir for 1 minute until fragrant.
  4. Add the drained sun-dried tomatoes and give it a quick mix.
  5. Mix the tomato paste with 3 cups of boiling water and pour it over the rice
  6. Place the chicken back on top, pop the lid on and bring it to the boil.
  7. Once boiling, I turn the heat down to medium-low and cook for 15 minutes, until the liquid is absorbed and the rice is perfectly cooked.
