One pan Chicken with Garlic Tomato Rice
Method
- Sprinkle the chicken thighs with salt, pepper and a little olive oil.
- Brown them on both sides in a hot pan, then remove and set aside.
- Pour the rice and garlic into the same pan and stir for 1 minute until fragrant.
- Add the drained sun-dried tomatoes and give it a quick mix.
- Mix the tomato paste with 3 cups of boiling water and pour it over the rice
- Place the chicken back on top, pop the lid on and bring it to the boil.
- Once boiling, I turn the heat down to medium-low and cook for 15 minutes, until the liquid is absorbed and the rice is perfectly cooked.
